All this depends on the offset you are running on those wheels.
Well, I'm looking at picking up a set of Axis OG Old Skools for the EG. The rim is 15x8 and from what I have gathered running a 195/50/15 will work with no rubbing or anything. I'm lowered on Tokico Illumina's with drop springs but the car isn't really low at all. What I am looking for are some quality tire suggestions available in that size.
Please don't post if you don't have any experience with the tire you are trying to suggest. I'm looking for a tire suitable in non-winter months as I will run my snow tires in the winter. Should be a fairly balanced tire as far as All Weather/Wet/Dry traction and longevity/road noise.
Any suggestions would be greatly appreciated.

A couple really decent cheap tires are the Hankook Ventus EVO and the Yokohama S.Drive. If you are looking for something softer and a little better maybe a set of Nitto 555 or Dunlop Direzza sport z1 star spec. I have had the Nitto on my Jetta GLX and Audi A4 and liked them. I have the yokohama S.drive on my son's 2008 impreza. The dunlop is relatively new and people seem to love it and finally the Hankook are the tires I have on my 1G.

195's will be pretty skinny on those with of rims. It will have a stretched look to it and is not optimal for grip. That's what you see on a lot of drift cars, if you're into that thing. If they have fairly low offset (-20 and under) or you use wheel spacers on the rims you'll probably be able to run a much wider tire. I would run the Falken Ziex ZE-912 225/50r15 It's cheap and sounds like exactly what your looking for. I also like the Nitto NeoGen. That comes in a 205/50r15. I would try to find someone else with a similar setup to find out what worked for them. You're getting into a much more extreme setup since the stock wheels are only 5" wide.
The offset is +25. I don't know if I can run 205's without issues, but I have seen/heard that 195's will not pose a problem. The stretch doesn't look too exaggerated on them.
195/50 I think is a bit too narrow for an 8. I'd just do a 205/50 and have your fenders rolled and have a little camber. 15x8 +25 is going to poke either way...

Everything I read is telling me it will ride flush and I should have no issues...I am just looking for tire recommendations.
Just buy a rear camber kit though... you will need it =)
What is your budget for tires? I dont want to naming tires and having them be out of your price range.

You probably just want tires to just around and go places. Nothing fancy and all correct?
I had them before on my beater, good tires for commuting around and going places. last a good amount.

195 on an 8" wheels is a bit of a stretch. Get Hancook V12 EVO's the sidewall is extremely flexible (good thing for stretching the wire, bad for handling) they're cheap too..
If you're not low, and don't want the hellaflush look, get 225's.
I was gonna say what everyone else said. I'm running 15x7 rims with a 195/50.15 tire and THEY are stretched. I have the S Drives, they are amazing. They don't tug or pull at my wheel (no power steering) in ruts or cracks in the road. Very drivable and tons of grip. I would recommend. But get a 205 at least. I know i had to stretch my 195 a little bit to avoid rubbing on my 7" wide rim, i couldn't imagine doing it on a 8" wide rim.
i have run 195-50s on 8 inch wide wheels without any problems, yes they stretch but who cares, if u want more grip go 205 50, depending on brand of tire u may still stretch, dz101s stretch, azenis and hankooks not so much
